Holiday Sweet Potato Cake
Try a southern specialty you'll find very similar to familiar moist and 
delicious carrot cake.

Prep Time:30 min 
Start to Finish:2 hr 10 min 
Makes:12 servings

Cake
2cups Gold Medal® all-purpose flour
1cup granulated sugar
1teaspoon baking powder
1teaspoon baking soda
3/4teaspoon salt
1 1/2teaspoons ground cinnamon
2cups shredded peeled sweet potato (1 large)
3/4cup vegetable oil
1teaspoon vanilla
3eggs
1can (8 ounces) crushed pineapple in juice, undrained
3/4cup sweetened dried cranberries
Cream Cheese Frosting
1/2cup butter or margarine, softened
1package (8 ounces) cream cheese, softened
3cups powdered sugar
1teaspoon vanilla

1.  Heat oven to 350ºF. Grease bottoms and sides of 2 round pans, 9x1 1/2 
inches, with shortening; lightly flour.
2.  In large bowl, mix flour, granulated sugar, baking powder, baking soda, 
salt and cinnamon. Add sweet potato, oil, 1 teaspoon vanilla, the eggs and 
pineapple with juice. Beat with electric mixer on medium speed 2 minutes. Stir 
in cranberries. Pour into pans.
3.  Bake 25 to 35 minutes or until toothpick inserted in center of cake comes 
out clean. Cool 5 minutes; remove from pans to wire rack. Cool completely, 
about 1 hour.
4.  In medium bowl, beat all Cream Cheese Frosting ingredients with electric 
mixer on medium speed until smooth. Fill layers and frost side and top of cake. 
Garnish edge with additional dried cranberries if desired. Store covered in 
refrigerator.
High Altitude (3500-6500 ft) Bake 30 to 35 minutes.

INGREDIENTS 
1 package (6 ounces) cherry gelatin

3/4 cup sugar

2 cups boiling water

1 can (46 ounces) pineapple juice

6 cups cold water

2 liters ginger ale, chilled
DIRECTIONS
In a 4-qt. freezer-proof container, dissolve gelatin and sugar in boiling 
water. Stir in pineapple juice and cold water. Cover and freeze overnight. 
Remove from the freezer 2 hours before serving. Place in a punch bowl; stir in 
ginger ale just before serving. Yield: 32-36 servings (5-3/4 quarts).

Holiday Focaccia

Prep Time: 30 min ; Start to Finish: 2 hr 40 min 

Makes: 12 servings  

Make merry with a fruity, nutty, sweet focaccia.


Focaccia
1cup warm water (120 to 130°F.)
2tablespoons oil
3to 3 3/4 cups all-purpose flour
3tablespoons sugar
1pkg. active dry yeast
1teaspoon salt
1teaspoon grated lemon peel
1/2teaspoon cardamom
1/2cup chopped candied cherries or mixed fruit
1/3cup coarsely chopped almonds
1/4cup dried currants or raisins
Topping
1tablespoon butter, melted
2tablespoons sugar



1 .  In large bowl, combine water and oil. Lightly spoon flour into measuring 
cup; level off. Add 1 1/2 cups flour, 3 tablespoons sugar, yeast, salt, lemon 
peel and cardamom; beat 2 minutes at medium speed.
2 .  By hand, stir in cherries, almonds, currants and 1 1/2 cups flour. If 
necessary, add 1/4 to 3/4 cup additional flour until dough pulls cleanly away 
from sides of bowl. Cover with greased plastic wrap and cloth towel. Let rise 
in warm place (80 to 85°F.) until doubled in size, 45 to 60 minutes.
3 .  Grease cookie sheet. Remove dough from bowl; place on greased cookie 
sheet. Lightly knead to form round ball. With greased hands, stretch and press 
dough to form 12-inch round. Brush with melted butter. Prick dough several 
times with fork. Cover; let rise in warm place until light and doubled in size, 
40 to 50 minutes.
4 .  Heat oven to 400°F. Uncover dough; sprinkle with 2 tablespoons sugar. Bake 
at 400°F. for 15 to 20 minutes or until golden brown. Remove from cookie sheet; 
place on serving tray. Cool 10 minutes; cut into wedges with pizza cutter or 
serrated knife. Serve warm.

Pope's Valentine Cookies

Rich and delicious cut-out cookies - wonderful for special holiday 
celebrations! These are the best cut-out cookies the long line of bakers in our 
family has ever found.

Original recipe yield:
2 dozen

INGREDIENTS
1/2 pound butter, softened 
2 1/2 cups sifted all-purpose flour 
1 cup sifted confectioners' sugar 
1 tablespoon milk 
1 teaspoon vanilla extract 
DIRECTIONS
Preheat oven to 325 degrees F (170 degrees C). 
Mix butter in a mixer until light, add remaining ingredients. 
Knead until velvety. Roll one-half of the dough at a time to about 1/4 inch 
thickness using the smallest amount of flour possible. 
Cut out and bake on a lightly greased pan for 12 minutes. Cookies will be 
almost white when cooked.

LO-FAT SUGAR FREE EGG NOG

1 gallon cold skim milk
2 tsp vanilla
3 pkgs (small box) instant vanilla sugar free pudding mix
1/3 cup sugar substitute ( or 8 individual packs)
1/2 tsp rum extract
fresh nutmeg
yellow food coloring

In a large bowl combine milk and vanilla and rum extract. In another bowl blend 
sugar substitute and dry pudding mix. Whisk into the milk mixture until 
blended. Add yellow food coloring to desired color. 
Top with grated nutmeg.

2cups chilled dry white wine, nonalcoholic wine or apple juice
1cup chilled cranberry-apple juice drink
1cup chilled sparkling water
Apple slices, if desired
Fresh mint, if desired

1.  Mix wine, juice drink and sparkling water.
2.  Serve over ice. Garnish with apple slices and mint.

Good for when friends drop by during the holidays. Quick and tasty. Add rum 
for a bit of a kick.

Original recipe yield:
40 (4 ounce) servingsPREP TIME 10 Min
READY IN 2 Hrs 10 Min


INGREDIENTS
4 cups cranberry juice cocktail 
8 cups prepared lemonade 
2 cups orange juice 
1 (4 ounce) jar maraschino cherries 
1 (2 liter) bottle ginger ale 
1 orange, sliced in rounds 
DIRECTIONS
In a large punch bowl, combine cranberry juice cocktail, lemonade, and orange 
juice. Stir in the maraschino cherries. Refrigerate for 2 hours or more. 
When ready to serve, pour in the ginger ale. Garnish each glass with an orange 
slice.

Eggnog Cherry Nut Loaf

2-1/2 cups all purpose flour 
3/4 cups sugar
1 tablespoon baking powder
1 teaspoon salt
1 beaten egg
Homemade Eggnog or 1-1/4 cups dairy eggnog
1/3 cup oil
1/2 cup walnuts or pecans
1/2 cup chopped maraschino cherries 

In mixing bowl, stir together flour, sugar, baking powder and 1 teaspoon salt. 
Mix egg, Homemade Eggnog or dairy eggnog and cooking oil. Stir into dry 
ingredients, mixing well. Fold in nuts and cherries. Turn into two greased 
8x4x2 inch loaf pans. Bake at 350 degrees for 45-60 minutes or till done. Cool 
in pans 10 minutes. Remove from pan, cool on wire rack. Makes 2 loaves.

Homemade Eggnog: Beat together 2 eggs, 1 cup light cream, 1/4 cup sugar and 1/4 
teaspoon ground nutmeg. Makes 1-1/4 cups.

Christmas Wreaths

1/2 c. butter
1 (10 oz.) bag marshmallows
2 t. vanilla
4 t. green food coloring
4 c. corn flakes
1/4 cup small cinnamon candies

Microwave butter and marshmallows on high until melted (1-3 minutes depending 
your microwave). Stir once at halfway point. Stir until smooth. Add vanilla and 
green food coloring. Put corn flakes in a large bowl then pour butter mixture 
over them. Stir thoroughly and quickly. Grease hands with cooking spray or 
butter. Shape 1/2 c. of corn flakes on wax paper to form a cookie sized wreath. 
Sprinkle with the red candies. Continue on working quickly until all of the 
corn flake mixture is made into cookies.

Easy Mixed-Bean Salad

You can’t go wrong with this short and sweet three-bean salad recipe.

Prep Time:5 min 
Start to Finish:3 hr 5 min 
Makes:6 servings 

1can (15 to 16 ounces) cut green beans, drained
2cups Progresso® red kidney beans (from 19-oz can), drained
1can (15 oz) Progresso® chick peas (garbanzo beans), drained
1can (2 1/4 ounces) sliced ripe olives, drained
1/4cup chopped fresh parsley
3/4cup Italian dressing

1.  Mix all ingredients in large bowl. Cover and refrigerate, stirring 
occasionally, at least 3 hours but no longer than 24 hours.
2.  Serve salad using slotted spoon.

Taco Salad 

1/2 lb. ground beef
1 (8-oz.) can tomatoes
2 cups torn lettuce
1/2 cup shredded sharp Cheddar cheese
1/4 cup sliced green onions
6 pitted ripe olives, sliced
1 (3-1/8-oz.) can jalapeño bean dip
1 tsp. chili powder
1/4 tsp. salt
1/2 cup crushed corn chips

In skillet brown meat; drain off fat. 

Drain tomatoes, reserving liquid. Cut up tomatoes.

In salad bowl, combine lettuce, cheese, onion, olives, tomatoes and corn chips.

To meat in skillet, stir in reserved tomato liquid, bean dip, chili powder and 
salt. Bring to boiling. Add to lettuce mixture. Toss well.

Serve at once.

Serves two.
