One Pot Dinner

Ingredients:

1 lb. Ground beef/or Ground Turkey
3/4 lb. Bacon, cut in bites 
1 cup chopped onion 
2 cans pork and beans, drained (reg. Size) 
1 can kidney beans, drained (reg. Size) 
1 tsp. Salt and pepper 
1 can butter lima beans, drained (reg. Size) 
1 cup ketchup 
1/4 cup brown sugar 
1 Tbsp. Liquid smoke 
3 Tbsp. White vinegar 

Directions: 

Brown ground beef in skillet; drain off fat. Put beef in crock pot. Brown bacon 
and onions; drain off fat. Add bacon, onions, and remaining ingredients to 
crock pot. Stir together well. Cover and 
cook on low for 4-6 hours.

Vegetarian Enchilada Casserole 

Ingredients: 

* 1 (28 oz) can crushed tomatoes in puree 
* 1 (14.5 oz) can chunky salsa 
* 1 (6 oz) can tomato paste 
* 2 cans black beans -- rinsed  drained 
* 1 can corn -- drained 
* 1 (4 oz) can green chilies -- chopped 
* 1 1/2 tbsp ground cumin 
* 1/2 tsp garlic powder 
* 5 corn tortillas -- cut to fit c/p 
* 1 can sliced black olives -- drained 

In a large bowl, combine the tomatoes, salsa, tomato paste, beans, corn, green 
chilies, cumin and garlic powder; mix well. Ladle about 1 cup of the mixture 
into the bottom of a 4 qt slow cooker; spread evenly. Top with 1-1/2 tortillas, 
cutting to fit as necessary. Spread on 1/3 of the remaining tomato mixture. 
Repeat these layers 2 more times, ending with the rest of the tomato mixture; 
spread evenly over the top. Sprinkle the sliced olives overall. Cover and cook 
on 
the LOW setting about 5 hours. Serve hot.

Cheesy Cauliflower Casserole 

INGREDIENTS 

4 ounces saltine crackers 
1/2 cup butter 
1 large head cauliflower, steamed 
1 (12 fluid ounce) can evaporated milk 
1 cup mayonnaise 
1 cup shredded Cheddar cheese

DIRECTIONS 

Preheat your oven's broiler. Crumble salted crackers into a small bowl and mash 
them with butter until soft. Place steamed cauliflower into a 9x13 inch 
casserole dish. In small saucepan, combine milk and mayonnaise with wire whisk. 
Bring the mixture to a boil; boil for 1 minute. Remove the pan from the heat 
and stir in cheese until melted. Pour this sauce over the cauliflower. Crumble 
the butter and cracker mixture over the cheese and cauliflower. Place the 
casserole into the preheated oven and broil until golden brown.

Ham and Cheese Casserole I

Ingredients

1/2 cup sliced celery 
1/4 cup shopped green pepper 
1/4 cup boiling water 
1 cup milk 
8 oz. Softened cream cheese 
8 oz. Cooked noodles 
1/2 tsp. Salt 
1/2 tsp. Garlic salt 
2 cups diced cooked ham 
1/8 cup Parmesan cheese 

Directions

Cook celery and pepper in water for 5 minutes. Drain. Heat milk and cream 
cheese in a pan over low heat until smooth, stirring constantly. Add seasoning, 
ham, cooked vegetables and 1/2 the Parmesan cheese. Mix well. Toss sauce 
lightly with the noodles. Place in buttered, 1 1/2 quart casserole. Sprinkle 
with remaining Parmesan cheese. Bake,covered, for 30-35 minutes at 350 degrees.
