5 SERRANO PEPPERS (ESPECIALLY SINCE IT DOESNT SAY TO SEED THEM) IS 
VERY VERY HOT. ADJUST ACCORDING TO YOUR HEAT PREFERENCE , OR YOU 
COULD SUBSTITUTE JALEPENOS. (ALWAYS WEAR GLOVES WHEN CHOPPING HOT 
PEPPERS, 3 DAYS OF BURNING HANDS IS NOT FUN)

I ALSO ADDED 1 CLOVE OF FINELY CHOPPED GARLIC AND CHOPPED RED ONION.
I AM ALLERGIC TO CILANTRO, SO I SUBSTITUTE PARSLEY (HINT FOR OTHERS 
THAT DONT LIKE IT OR CANT EAT IT).

INGREDIENTS
3 tomatoes, chopped 
1/2 cup finely diced onion 
5 serrano chiles, finely chopped 
1/2 cup chopped fresh cilantro 
1 teaspoon salt 
2 teaspoons lime juice 

DIRECTIONS
In a medium bowl, stir together tomatoes, onion, chili peppers, 
cilantro, salt, and lime juice. Chill for one hour in the 
refrigerator before serving.

4 pounds vine-ripened red and/or orange tomatoes (about 5 medium) 
1/2 medium onion (preferably white) 
1 cup fresh cilantro sprigs 
4 fresh serrano or jalapeno chiles, seeded and chopped 
2 teaspoons minced garlic 
2 teaspoons sugar 
3 tablespoons fresh lime juice 
Kosher salt and freshly ground black pepper 
Quarter and seed tomatoes. Dice the tomatoes and transfer to a bowl. Finely 
chop enough onion to measure 1/2 cup and chop cilantro. Stir chiles, onion, 
cilantro, and garlic into tomatoes with sugar and lime juice and season with 
salt and pepper.
