I was once (20 odd years ago) involved in moving a datacenter from one city
to another. 9 months+ of planning...
We took backup on tape cartridges of everything, moved the cartridges and
the physical DASD boxes by (separate) truck. But we had a new CEC with
some new DASD already up running

outsourcing company, how do they do it? How do they move all that data from
one location to the other?

For one migration I did, we used EMC SRDF to copy to another local set
of boxes. On move day, the drives were removed and flown to the
new location and put in empty frames. So no dump/restore. It was
cheaper than replicating all the data across a network link with the
bandwidth needed, and
