I think this one is the reversed of bug #1711452. The system I have does not display anything when gfxpayload=keep. When using gfxpayload=text, it works normally. IIUC, in text mode, grub will still try to iterate all available modes, I guess that's why the issue is gone under "gfxpayload=text"?

Bluetooth audio and profile selection is actually the job of pulseaudio, not bluez (surprisingly). Also, A2DP has always been preferred over HSP/HFP but the availability and detection of A2DP has been historically buggy. So the selection might not turn out as you hope. AFAIK fixes for this
