I am on the latest release of Mountain Lion 10.8.2 and use Apple mail to
monitor 6 accounts - 2 gmail, 1 hotmail, and the others old fashioned pop. Some
of the accounts are imap and the others are pop.

It depends where you're looking, really. If you're looking in the favorites
bar, then yes, by default, you only see the inbox and sent mailboxes. There's a
button you can press in that bar to show a mailbox list, however. If you're
using classic view, which you can set in preferences,

Okay, lets explain how mail protocols work.
There is 2 protocols to receive mail and one protocol to send. These are the
common protocols:
Imap
The mail is left on the mail server. Permits you to access it from multiple
accounts.
POP3
Most mail clients will automatically delete
Paul, you can simply set up the account as imap, and simply never
send anything while using that account. That will allow you to read
all the messages, but as long as you don't delete them, they will
still show up on the other computers pulling that account as well.
