Hi, To make a USB installer you only need around 6 to 7 gig so an 8 gig USB drive is enough. I highly suggest USB 3 which covers usb2 as well but 3 works bloody quick in a new machine. As for removing a machine from the beta program, check the site for the beta setup and see what it says

The only way you'll be able to do that then is to create a USB install key of the shipping 10.11.5. You can still read download it from the app store to create the installer. There's a program called DiskMaker X, which will help in the installer creation process. Sent from my iPhone 6S Plus >
