How involved would fixing the cruise control be?
Easy enough, with soldering skills. (Not really a good
thing to learn on.) On the dozen I've fixed, I think
maybe one needed more than just resoldering.

No leaks? Why does the AC need recharge, then?
In car-sales world, 'leaks' aren't defined by missing
fluids. They're defined by puddles under the car!
The AC system is not hermetically sealed, they _do_
leak. It's just supposed to be very slowly.

Anyone got the original info on this?

Iirc all of the 617.95x should take the same filters. I am using the
filters I bought for my 84 300sd (which was totalled via rear impact)

The 60x's take fatter filters; I remember being torqued when I found

What should you do? Pinch off the fuel supply and let it drain, or is
there a drain on it?

Try Rich's suggestion first. You have 4 choices
1. See if the strainer comes out with the hose fitting (easy)
2. Se if you can get a channellock or a basin wrench on it.
3. Drop the subframe partially to get more clearance.
4. Remove the axle bolts. Not fun, and the bolts are pretty soft,

I'd guess change out brake fluid, new M1 oil, new coolant and drain

If by laying one up, you mean more than a winter storage, I would change all
fluids, completely clean the engine compartment and underside of any dirt
