I might be making things up as I go along, but some (all?) of the Nitto front racks use an m6 bolt brazed onto the end of a steel tube for the fork crown stay, so if there's any flexing it will stress the bolt<->bolt head junction (which has already been weakened by brazing it to the tube.)

I think I'd recommend the P55 fenders regardless. Well installed P55 fenders will not look bad at all with 42mm tires, or even 38s. 32s would look weird but there is no reason you would ever run 32s on an Appaloosa. Then if you decide to try wider (or knobbier) for whatever reason, you can.
