As you can tell from the responses, the answer to your question is "most definitely" some of us use non-drop bars for 75km+ rides. I've done it myself many times with albatross bars, including several multi-day tours. As others have said, it takes some experimentation to dial-in the fit. My

The 2 bolt Nitto allows one to finely adjust the angle. It seems you can loosen one bolt by a 1/2 turn, then take up on the other the same amount, & get incremental change. When I changed over to upright a few years ago, I noticed my attitude became more casual. Another upright user told
