Not sure what ebb the gryphon uses, but I too used to be wary of ebbs. However,
the bushnell ebb on my Jones has been trouble free with not a single creak or
slip for almost 3 years now. I would buy another in a heartbeat. Ebb are easier

1. Have more consistent energy throughout the day and sleep better once I want
to sleep. No food comas, huge mood or energy swings. In addition, while I felt
less "on my game" when it came to sports the first two
50 SKS with 47mm mondials on my 60cm Chev.
Using a diacompe center pull on the front gave the necessary breathing room.

To add one more o this. If you friction shift you can make a modern xt derailer
work despite the different cable pull. At least it works with my 8 speed
shimano ultegra shifters. Shifts very well across the whole cassette. Main
reason to go that route is to get a clutched derailer. So much
works very well with the xd2 crank and 8 speed chain. the longer cable pull
even makes for more subtle trimmng.

Prefer cotton for hot weather. The fact that it gets wet helps me stay cool.
Long sleeve cotton dress shirt is wonderful in the heat. Wool is great for
colder day rides.
Synthetics are great for multi day as they pack much smaller for similar
warmth. Smell is an issue over time though with
Paul cp did not reach far enough in mine to be comfortable. Partly a function
of the rims. The diacompe has more reach and stops as well.

The bike's geometry and purpose dictate bar height and bar shape to a
degree.
On my brevet bike I run drop bars below seat with a longish stem
On my Cheviot I run them above

Compass Snoqualmie Pass tires. 700cx44. About 150 miles on them. Tan walls.
Standard casing. A little dirty, but plenty of life in them. $60.
Ultegra 10speed rear derailer works with 8 and 9 speed too. Good condition.

Choco-moose have always been tigged.
Boscos and Bulls used to be filleted, but appear to be transitioning to tigged.

I have put 10s of thousands of miles on 10 speed chains and have had no issues.
I generally replace chains every 2500 miles no matter what. Saves the drive
train in the long run and chains are cheap. 10x are a female dog to friction
shift, but my indexed setup stays good for thousands of miles
Yes they do! Another solution is to buy a rear brake nutted version and use
a problem solver extender thingy on the front.
Either way, it is an easy thing to solve for.

The Bella Fiesta will solve the straddle cable issue. The diacompe may be a
little tight around a 60mm fender, but some strategic dimpling would do the
trick. Mafac Raids would be the best choice likely for that fender width, but
they can be a little tricky to find at a reasonable price and
I am aware that the Cheviot has no cp brazeons. I do own one ;-). Dc750 is the
diacompe model. Can be found on ebay as singles. That brake is designed for
centermounting. Nutted version is what I used as it saved me from dealing with
a Sheldon nut. Just fill the recess with a valve stem
