One boat guy I know likes round tip knives because if the boat moves around 
while he's cutting something and he slips it won't stab him.

Come to think of it, why do knives have pointy tips?

I remain a fan of Seki City knives, and also a fan usefullness, or biggest 
bang for what it costs you - that can be money or storage space.  
When Spyderco was selling out their Native Lightweight Generation 1 run for 
$20/, I bought knives for me and everybody I know.  And I liked this knife 
enough that I bought one later generation made with better steel.  Without 
wanting to light up the smoke police, before they disappeared, I bought 
several Al-Mar Havana Clippers, a wonderful little tanto + cigar cuter that 
disappears in your pocket.

 fishing bags, that is the easiest one-hand open knife I've ever owned.

I never really notice the miltary grade weapon look since the handle is

Don't they still have the standard buck knife that's looked the same for 50 
years.   Even has a rivendelish leather case that wears in nicely and you cut 
your thumb till it dulls while flipping it open.

I snagged a free plastic knife tonight with my to go order ::. Can't cut butter

looks like a spoon). In my experience, kids learn just fine to respect 
something that's sharp when they are shown it with respect and see me

reaming tool! Cool! Sardonic grin.

Wl, I remember (said the old man, settling himself more comfortably on
the saddle) getting my first pocket knife at about age 8, or perhaps seven
-- my father gave it to me, and it was one of the traditional bone- or
ersatz-bone-handled ones with a large blade and a small one. I 'mediately
managed to cut myself, but hell, that was life as a little boy -- just one
more source of blood like all the others. (I gave up running to my mother
in tears about age seven.)

For folks having trouble keeping knives sharp, here is a fast and cheap and 
effective solution:

That block keeps my stainless Freidrich Dick knives, my Sabatier carbons, 
my Shuns, my Laguiole stainless, and my Opinel carbon, all razor 
sharp.  Once one becomes familiar with how that tool cuts an edge, it 
becomes easy to choose the appropriate grit for the job at hand.  An 
occasional re-shaping of the edge with the coarser grits, and gentle 
touch-ups with the 600, produce the desired results.  I've given away a 
half-dozen of those hone blocks to good friends, I like them so well.  
I grind my European edges a bit more acute than factory, maybe 20-22 
degrees, and the 200-grit face will rough in that angle quickly and 
easily.  Not as acute as my Santoku blades, but more acute than is typical 
for European knives.  Good results.

Today, refund of the $40, order canceled, no explanation.

Only reason?  I bought my Opinel (discovered them a few years ago) because
they are SHARP, and easy to keep that way, cheap, good blade lock,
lightweight, don't look like a military grade weapon (what's with knives

I don't find the maintenance to be all that bad... I was worried I'd be
carrying around a stick of rust, but even after tipping my kayak and
falling into brackish water it didn't rust.  All I did was wipe it down
with vinegar to force a a surface patina on the first day and since then I
use it, wipe it, wash it, just like any other knife I've ever owned and
just stick it back in my pocket.  Other than moisture causing the handle to
swell and making it harder to open sometimes I've had no issues at all --
definitely not rust.

I love to look at the blade and wonder at the interesting color patterns
(grey and blue) and how they vary after every use.

Tell it brother.   I too despise that cheesy faux military/weapon look most 
pocket knives seem to have taken on in the past decade or so.   I blame it 
on movies and TV.   I keep an Opinel folding saw in my camping panniers and 
it's the bees knees.   That or a pocket chainsaw and a fixed blade can do 
serious work and keep you warm (only use them on dead wood of course).   
I'd be buying a hatchet from Riv right now but already have one which is 
more than enough (they're not like bikes :)

When it comes to little folding knives I do like my little spyderco 
knife.   It's only about as big as my thumb, fits in my jeans coin pocket 
and opens with one hand.It seems at least half the knives spyderco 
makes are of the dumb weapon variety, but the little one I have is fairly 
innocuous and frequently useful.

The opinels are great for sure. Tons of bang for the buck. 

I have a couple other inexpensive knives that have proven surprisingly 
hearty and get tons use. I've had several examples of both and all have 
been found at thrift stores and garage sales but are readily available for 
20-30 bucks.

Douk Douk are similar to opinel being French and thin carbon blade, but 
have metal scales. They have a super thin profile so are easy to carry in a 
pocket. No lock though and have recently caught the eye of lifestyle 
purveyors which is up to the viewer to be deemed good or bad.

British military knives by Sheffield are also fantastic. They are a bit 
more rugged and have stainless blades. A couple versions are made in 2 and 
3 tool configurations. I prefer the 2 blade without the marlin spike.

I grab either of these when I see them and keep them handy in tool boxes, 
back packs, saddle bags, kitchen drawers etc.

Patrick, as much as I love my Seki City knives, there is also a place for 
quality-design, China-production knives.  Mine in the kitchen is made by 
Cold Steel, and in the shop, it's a Spyderco Byrd.  Search these on ebay. 
 Twenty-dollar, throwaway knives, that I can't seem to wear out, so they 
keep doing all the things quality knives aren't supposed to have to do, and 
they don't get thrown away.

Can any knife nut recommend me a folding kitchen knife with about a 5
blade, for camping? I want something stainless with a fairly straight
edge for chopping and cutting food. I'm sure Spyderco makes great
knives, but they do not make a great website. Zillions of knives, and
no easy way to search for what you want.

My father-in-law gave me a folding hocho several years ago. It is an 
excellent food-prep folding knife. SHARP!

My daughter took over my CRKT M-16 Compact made in USA.  I tried replacing 
it with a China-made version of the same knife, and the Carson flipper 
doesn't flip at all.  Agree about the easy open Spyderco.  I also have a 
Benchmade Mel Pardue axis lock, clipped to one of my fishing bags, that is 
the easiest one-hand open knife I've ever owned.

I used to have a pretty good knife collection  Interests changed, I kept 
the spyderco native and Victorinox camper,.  Got the native at walmart 
years ago, $30 for a MUSA knife with an S30V blade what a deal. Only 
negative was the FRN handle. I wonder if there are any sebenza fans on here?

Yes, the funniness had nothing to do with who had them first, and I didn't 
intend to imply that anyone copied anyone.  I only found humor in both 
establishments choosing to carry them this summer.  Clearly both Grant and 
Chris used them as boys, just like countless others have.  Maybe they'll 
both carry Wiffle Inc products, which are still miraculously made in 
Fairfield, Connecticut.

Are the Opinel knives better than, say, Victorinox knives? Is it a retro
thing or do they have better blades?

If not Opinel or Victorinox, what is a good pocketknife for casual and
occasional use, no more than 3 long -- single blade is fine. I'm no
connaisseur, obviously, but I'd like to have one. I've got a Victorinox
Swiss model but wouldn't mind another one with more bulk devoted to the
main blade and less to accessories.

Carbon blades are the only reason to get Opinel knives that I can see, 
other than good value for a stainless blade. Carbon holds a sharper edge 
than stainless, but requires actual care (oiling as needed) to prevent rust.

BTW, classic Texas BBQ is an old German butcher shop, you order meat, an 
onion, a tomato, they wrap it up in butcher paper and you eat with your 
pocket knife.  
There's a butcher knife on a chain at a pulpit on the wall - if you have to 
use it, everyone knows you're not from here

Help me out here, a knife kneophyte.

My own experience, which is with ordinary kitchen knives, is that good
quality stainless steel ones -- Henckels -- are very hard for me to
sharpen; while non-stainless -- Old Hickory is the brand I have --
sharpens easier and, moreover, responds to a steel much better than the
Henckels.

Is it true that stainless steel (well, good ss -- I've had cheap ss that
seemed as soft as non-ss) is much harder than the stuff that Old Hickory
uses, and that it is this hardness that makes it much harder to get the
right edge on it, while softer steels take an edge much more easily (and
respond to the steel much more readily) but also lose their edge faster?

At any rate, I gave up my Henckels because I couldn't get them as sharp;
never got around to taking them to a professional sharpener.

My gauge for kitchen knife sharpness (apart from the catches on your
fingernail test) is that a knife slices a ripe tomato easily without
crushing it.

for my kitchen knives, I bought a Wustoff steak knife set with an empty 
block.  I also bought the Wustoff scissors, steel and bread knife.  I 
gradually filled the remaining holes in the block with handmade Japanese 
knives - Sakai, Kanatsune, Al-Mar.  
Stainless knives form some delta-ferrite as stringers in the metal first on 
cooling, the remaining metal is austenite then transforms on cooling to 
martensite.  
Martensite is the hard stuff, delta ferrite is soft.  Carbon steel has no 
delta ferrite, which is why it holds such a good edge.  
Really good stainless such as VG-10 forms much less delta-ferrite than 440C 
stainless, and good handmade knives break the delta-ferrite that is there 
into very fine particles.

I would be into Wiffle Inc stuff!   

Sorry to misinterpret your post and come down on you.  I find it tiring to 
have people frequently creating binaries by pitting Riv vs VO, or BQ vs 
Riv, Giants vs A's, etc, etc.  I guess I need to chill and not be on the 
forums for a bit.

I'm typing this in my work cubicle, with a Wiffle Ball Bat leaning on my 
chair.  I keep it in here just because it's a tactile thing to fiddle with, 
and it makes an impression when I carry it into a meeting.  Oh crap, Bill

I have a growing-old BLUG post in the saved folder that announces we're not 
going to keep selling Opinels. Some guys here checked to see if VO had 'em 
and they came up blank, but --missed it, or something. Opinels are for 
kitchen and picnic use, cutting soft foods and things...and that is a good 
thing, a common need. I think you might wreck one by hard carving wood with 
it. A Victorinox is way sturdier, with a metal body (even if red plastic 
covers), and so on. I wouldn't say one is better than the other---for 
cutting chunks off cheese or salami, they're both great, but I'd get the 
Opinel. For keeping for years and general stuff, a Victorinox.We'll sell 
thru the Opinel knives, and that'll be it. The roundies are neat, I'd say. 
We have a few left, but they're going. 

We'll get some other knife. Mora, or Victorinox inexpensive fixed blade 
maybe, or maybe the old Victorinox we had---but it's like $45 now, which 
takes it out of the 'yeah, I could always use another knife...I don't have 
one in THIS bag' category. 

We have more 'chets coming in, too (arms-race wise?). With our new tiny 
retail downtown store being called Bike Book  Hatchetsorta gotta have 
a selection. It's not a survivalist thing, anything odd lke that (and yes, 
I think that is odd). IN the new place I hope to have a small secret 
throwing range---not throwing the nice hatchets, but some cheapish 
tomahawks. An after hours thing. No beer, no goofing off, just  every 
wanted to throw a tomahawk? OK, now you canif you don't look scary and 
are a bicycle rider, not a half drunk wandering in from the pub across the 
street. There is a population of wheelchair-riders in town. In all towns, 
of course. I have friends in chairs. So, I'm also thinking have an evening 
where wheelchairers could come and throw. It's quite a powerful feeling to 
huck a 'hawk and have it THUNK into a big round of redwood, and I've got 
the redwood. Would need city approval. Hoo body. 

But how to communicate the intention and all without coming off like a bad 
guy...and how to get the word outis the challenge. It would be so easy 
for somebody to twiist it around, and --- if anybody out there has some 
experience or insight into this, pm me. It would not be a come watch 
wheelchair riders throw tomahawks kind of thing. It would be private, just 
an opportunity for three or four to come on by and chuck the things and 
watch them stick. It is fun, period. There is no disadvantage to being in a 
chair. If you're lousy and not learning, you're just lousy and not 
learningbut I think 100 percent would be thunking 60 percent after the 
fifteenth try.

Life and everything...way too complicated. Sometimes I think I want nothing 
to do with it.
