A little late in the thread I know... One of the considerations I found pertinent to my fenders/no fenders offroad experience was Toe Pedal Overlap. Although I ran my Saluki on the dirt, with fenders it took too much concentration to be fun on semi-technical to difficult singletrack to keep the front wheel between my feet. If offroad just means trails, you probably won't need to make any changes, and metal fenders will do just fine. Prepare for lots and lots of rattling noise. I was expecting wetter weather than we have in August for the D2R2 (crazy randonee in Massachusetts 112 miles, 70% on dirt roads, and 11,000 ft of climbing) so I rode my Atlantis with Honjos installed and while there was a great deal of rattling they worked fine. Granted this was mainly dirt roads and a few jeep tracks. Your main risk is that something gets pulled up into the fender and folds it over stopping your tire and your bike but not you... bad juju. If you set up the fender so that the tail of it is closer to the tire than the rest of it that will mitigate (but not eliminate) this risk, also helps with snow build up if you're into that kind of riding. SKS fenders have a quick release doodad on the front fender that will allow the stays to come off the fork, this is supposed to prevent that front tire lock-up and the inevitable endo that would follow. I've been running Berthoud fenders in offroad trail-riding for a long time. They work fine and are only noisy when a pebble goes through. I have Planet Bike 60s on my Big Apple shod Monocog 29er, and there is no problem except shake thanks to flimsy stays. No rattling, either, but then the Monocog has huge clearances even with 60 mm tires and fenders. I'd say you will be fine as long as you have, say, a cm between fender and tire. Also, be careful about the trailing end of the front fender which can hang up on dropoffs. The PB front is foolishly short by road bike standards, but with the very high bb of the Monocog it actually works well enough, and it doesn't hang up on things. The primary concern of using fenders on off-road trails is being thrown over the bars when a stick catches your fender stays or an object funnels up into the fork crown. Secondary concerns are bending/breaking the fenders on drops, rattling noise from twigs/stones making their way through and mud piling up in the fender and dragging on your tire. That said, I ride my fendered Saluki on as many jeep trails that my friends and I can find here in Vermont. But, if I mostly rode my Saluki on technical, singletrack trails, I'd remove the fenders, provided I had another nice bike with fenders on it.
