I am not sure about the server side, but from my experience, sofia
should be able to handle lots of simultaneous sessions on the client side.
I expect you will run into CPU constraints in forwarding the RTP before
the stack gets bogged down.

just a quick note that it might take a while to get responses here in July
as many of the Sofia-SIP users/devs are on holiday. I'm at guadec2006
