To the original question:
You can have multiple sort fields just as you can have multiple artist
fields. For instance, I often have multiple artists AND artistsort tags
in tracks. The trick is to make sure you place the multiple tags in the
same order for both the main field and the sort

I am wondering if it would be possible to make a plugin or to upload a
txt file or something so that LMS knows how to sort artists and
albumartists. For example, I have some albums where I have multiple
albumartists. I do not think I can use albumartistsort on those albums.
