First cd over to your witango directory, which (depending on where it was
installed) might be from the root:
cd /Applications/WitangoServer/5.5/
Then try this command to start a particular witango server that you have
defined in your witango.ini
sudo ./witangod -u "witango" -c "WitangoS

I didn't realize you were on Mac. Those commands are for Windows.
On Mac there may be a service script in init.d. I'm not entirely sure how
sophisticated those scripts were on v5.5
The command would be something like: service witango restart
