There is LaTeX (in TeXLive packages). PDF files can be generated using
pdflatex, lualatex or xelatex (or dvipdfmx, although it's probably less
comfortable). PostScript is usually made using dvips
Tex Live provides a great All-in-One Solution.

AFAIK pdflatex also supports bookmarks and other PDF related attributes
of the document, which dvips cannot create. I might be wrong though.
