Here are 2 little tools that would solve this bug if they were pre-installed in
the live-CD:
1) https://launchpad.net/clean-ubiquity : automatic MBR (and partition tables)
backup during Ubuntu installation.
2) https://launchpad.net/os-uninstaller : uninstalls any OS in 1 click !

Why to backup the whole windows and not just keep it?
I only refer to the common situation that the common user want to keep is
windows and to install Linux also.
If the user regret all the need to do is to restor the MBR and format the Linux
partitions or to delete them and extending the Windo
Restoring the MBR is the easy part. It's restoring an overwritten
Windows installation that's difficult.

It's shouldn't need take much time to restore the boot loader part of
MBR. It have very small size.
You can also add big warning for the user for no touching in the
computer.
What if will be electricity break?
You can also add comment that the Ubuntu CD can continue restore if the
computer stop

restore would be helpful, it would require a lot of disk space and take
a lot of time. An impatient Windows user would have hit control-alt-
delete long before any viable fix could be attempted.

change and it not wise to change it.

I think ubiquity would probably be the place to handle the initial save
of the MBR is this were to be implemented. I'm not sure about the
restoration: that might need another tool somewhere (perhaps on the
LiveCD).
