Ok so I have done some more research and this definitely seems to be an issue
with Grub and my motherboard/chipset. Other users of my motherboard are having
the same issue with Grub and have resorted to using another bootloader called
GAG to get it to work. Please see this discussion:

Ok. In fact I don't want to install the NVidia proprietary drivers. It was only
an experience because the nvidia-glx that I always use don't work on Feisty. My
goal is to put the nvidia-glx working properly with Feisty Fawn (as said in the
first message).
