If you are wanting to create a folder using your iPhone and move email into it,
this is how you do it. Go to mailboxes and select edit. At the last item is new
mailbox option. Here you name the folder and activate the location to put the
folder where you want it. Finish by selecting done at

If you have a computer then yes, there are ways to apply the rules so that
incoming emails goes into their respective folders.

that can be done with mail rules in the mail app on a Mac computer.

Keep asking Apple to include this feature and maybe one day it will show up.

there will be two selections, all accounts, or per account. Choose per account,
and then you can change the signature for any or all of the accounts you have.
