First I would manually sign out of Facetime and iCloud.
Then go to Settings > General > Reset and choose to Erase all content and reset
settings", not sure if that is the exact wording, but that should be close.
Once you accept this everything will be erased and the phone is set back to
factory
Would that be in settings where I could set it to factory default?

when you give it away.
Or keep it and use it as a media only device for music or books etc.
