Gmail will delete messages in the Trash folder after about 30 days. I
just let Google do this clean up for me.

Is it possible you have Gmail set up to use POP instead of IMAP? What
you describe could happen if you're using POP and you don't have it
configured to remove the messages from the server after downloading them
or deleting them.
