If you do not have text selection on your rotor, go to the VoiceOver settings,
rotor, and select it.
Then, get VoiceOver to the beginning of what you want to copy and turn the
rotor to text selection.
If you want everything, flick up or down until you get to select all, then
flick right

In fact, I’m using the native Mac-OS e-mail client to read your message and
opened the menu, selected FILE and arrowed down to the “Save As”

You don't tell us what you are using for your email. I use Eudora,
and if I want to create a text file, I go to File and Save, and the
contents of the email are saved to a text file which I can then send
as an attachment. If you are using a web-based email application, my
advice
