Not sure what is causing this, but you don't have to use the custom label
feature to rename a folder. You can just open the folder, double tap

You don't need to do the two-finger double-tap and hold. Just Open the folder
as usual, then do a double-tap and hold on one of the apps in the folder.

I am having a similar problem. I created a folder on my iPod 6th generation
called Recipes, and now whenever I encounter an edit field on my iPod, and
even on my Apple TV, VoiceOver will say Recipes. I deleted that recipes
folder, but that didn't fix the issue. I don't have any clue on how to
