most of the places that I see yet are in apps. In fact, when I wrote to Apple
about this they asked me for the apps that I was having problems

I think what you heard about was the new VoiceOver Recognition which might be
useful in isolated situations, but is currently mostly annoying.
I turned it all off.
You can enable it and add it in the rotor to toggl: on and off but I prefer it
off for now.

Now I also have back tap (double tap) to answer/hang up.
In fact it just emulates a magic tap and it works just like double
