There are a few webservers that implement 2.1, check out:

 * Orion Web Server (still in beta) http://orion.evermind.net/
* Netscape Enterprise Server B2
 http://www.iplanet.com/downloads/betas/detail_12_23.html

 I'm not sure what the stability is on either of these packages.  Let us
know if you try them out.
