I do such kind of measurements with an Openbench Logic Sniffer. Reasonable price and around for years. I just bought this "OLS on steroids" [1] [2] with much more RAM but I am unsure about its future availability. Finding the best firmware initially is the biggest obstacle. I will update the sigrok wiki pages once I find a time slot for it.
