The key to bird photography is fast  focus. You don't have time to think, compose, meter and click. Wildlife happens. A 500mm lens with a good digital slr body should do the job. I'd second the Canon DSLR recommendation. Canon bodies have great autofocus capabilities sp. for subjects that are on the move.
