um, aren't the quirks essential?

i don't recall what was in my mother's battered ancient copy, but i
think 'cook and see' must have contributed in spirit if not in letter to
her tendency to include in her own recipes instructions beginning with
"five minutes BEFORE it is done, add xyz". 

that reflects the holistic indian view of life (and cooking), where time
does not run sequentially as it boringly does in the West, but can be
measured from any direction or perspective.
