Yep, some people would not pay attention to the circuit hookups, I do tell most 
to use two silver electrodes just in case.

Agreed,
I think the general wisdom for two silver 
electrodes is that someone may one day inadvertently swap their clips and harm 
themselves with the resultant brew. 
although I use a stainless steel cathode for an 
electrode myself, I wouldn't recommend it for other people, or even present 
it as an option for fear of their safety.

Yes, 
you can use a copper wire/rod for the cathode. I use the thermocouple for my 
temp control for my cathode and attache the voltmeter and the current meter to 
this. Saves your silver wire!
