Initially you get two effects.  Oxidation and driving off of hydrogen.
Oxidation causes fats to go rancid, which is cancer causing if I remenber
right.  Driving off hydrogen (which normally reacts with oxygen and produces
water) leaves behind a broad assortment organic chemicals, many of which can be
cancer causing and can be toxic.  At some point in the process, all the
hydrogen is driven off, but all the carbon is not yet oxidized, and will leave
carbon.  But it is the intermediate products that you want to avoid.  If you
continue heating carbon, it will totally disappear, turning into CO2, which
once again is harmless in moderate amounts.
