Dessicated coconut that is "naturally processed", ie unbleached, can be
purchased at the same price as the bleached stuff from many supermarkets.
Because it it so tolerant to heat and oxidation, the oil (approx 65% of
total) should be good. If you have reservations it might pay to contact the
manufacturer and ask the right questions.
