The nitrates in bacon can be countered by adequate Vit C which blocks the formatoin of nitrates to their toxic form nitrosamines. Better to eat natural uncured bacon but the fat is not bad for you unless it is hydrogenated or processed under high heat which causes the formation of trans fats.
Solid at room temp tropical oils are also bad for you if eaten from a clean source. Virgin Oil of Coconut is quite good for you. Without some fats in the diet our health suffers. It is indeed an indvidual metabolism consideration. Beef feed grass only, particularly long horn is very low on the bad cholesterol scale. Buy from a local farmer who produces a long horn cross, the cutability is lower but the meat is excellent and taken off GREEN pasture (don't slaughter off dried grass or a hay diet) the flavor is excellent. We used to raise them ourselves and had the opportunity to compare the meat to straight angus, which did not taste as good to us although it is said to produce the best meat. Raw meat in the eskimo diet might have parasites, don't know if any survive up there but knowing the adaptability of nemotodes . . . so there is no perfect diet -- in fact no perfect anything. There is only optimization of what is. Always look to reduce your total load but at the end of the day don't stress about it, now that WILL make you sick!
