According to Schultz, pepper when added to water and taken orally is immediately taken up by the mucous membrane and salvia reacts instantly. The stomach begins preparing for the food versus a capsule which just unexpectedly opens suddenly in the stomach giving what Shultz describes as "a punch in the stomach". Makes sense to me. additionally items in the stomach only have so much time to digest before they are passed through.
