I got the coconut oil "candy" recipe here, but can't remember who posted it. It consists of melted virgin coconut oil, cocoa or melted unsweetened chocolate, sweetener, and whatever else one wants to put in. I put in almond meal, chopped nuts, unsweetened dried coconut. Mix, chill til firm, then I cut it into small pieces and keep it stored in the fridge. When I get some leftover almond meal from making milk, I'll try that and see if it works in the candy. (I use stevia for sweetener) I have made a couple batches with unsweetened raw cacao nibs, but have to confess I don't like those much. I just played with proportions of the ingredients until I had something I liked. I tried a batch with whey powder and that was a disaster--very rubbery/sticky to chew, couldn't get it off my teeth. I like whey, but putting it in this particular recipe just didn't work.

Sol - a great idea for the meal - will try it. No, I don't remove the skins. Only give them a quick rinse to start with. I do toss out the soaking water and use fresh water for making the milk.
