If you just want mail, then SIMS is great, but Communigate Pro is much more of a match for Exchange. In fact for $39 per seat you can get a plugin for MSOutlook that will give you ALL the functionality of Exchange on an IMAP server like communigate pro (or even a few free ones if need be).
Bynari's InsightConnector plugin: http://www.bynari.net/bynari/insightcon.html You'll see on the Features tab, an extensive comparison chart detailing how this approach is even more flexible than using an Exchange server, and on the Documentation tab you'll see Communigate Pro listed amung the compatible IMAP servers.
