If you are on OS X, I recommend the builtin Mail.app included with OS X. It is really very good. If you are running <X I think Eudora is the only way to go.

This assumes you don't want to run a CLI type system like pine or mutt.

Also, MailSmith (from BareBones) is very very good, if you don't want HTML mail and don't need IMAP.
