Make sure you have the Apple mail server turned off if you want to do this. Personally, as much as I liked SIMS on OS9, there are better ways to work now that we have a Unix-like OS under the hood. I'd recommend Communigate Pro, but Postfix and Exim deserve consideration as MTAs. (For the back end I'd look at Cyrus for POP/IMAP, but don't know enough to discuss it intelligibly or compare it to alternatives.) As of 10.3 Apple's mail server has improved from abysmal (10.0), bad (10.1) and mediocre (10.2) to be a reasonable choice for deployment. I wouldn't recommend it for 10,000 heavy IMAP users, but I wouldn't recommend Apple hardware for that sort of volume anyway.
