I think the difference here is that SIMS makes an assumption about text files on the Mac having mac line endings. The RFCs for email specify what format the mail comes in so it comes the same way from any host, and therefore a different assumption is made.

Alternatively, is there some way on a PC to create cut and paste-able text with Mac endings? I use Crimson Editor which can read and save files with Mac, DOS, or UNIX line endings, but a cut and paste from its editing window always yields DOS line endings.

Does your editor have a good search replace function. Just convert on open and then convert back before you save it out. I'm sure there must be several free editors on Windows that could do this. I can't recommend one though since I don't use windows often enough to know of one.
