I get "unreliable" results with g711ulaw trunking. Ive used several
providers. One (or 2, 3 page) faxes seem to be fine. Large faxes ALWAYS seem
to fail.

POTS to the ATA is pretty reliable since the jitter and latency is internal.
Faxes over a siptrunk are completely different, especially if you need to
send multiple pages. It will always be unreliable in g711ulaw (as in
trunking, how unreliable is different on a daily basis IMO. The whole reason
t.38 was developed was to get around the KNOWN issue with g711u and make
Internet faxing reliable.

I can fax inbound to a lab 4.3.x system from POTS to PRI in front of sipx
all day long without issue, because the PRI does t.38 and so does sipx. It
only has to traverse 50 feet on t.38 with no latency to complete the fax.
When this is done raw from a siptrunk, results are different, which is why
t.38 needs to be available on your siptrunk provider (or a separate t.38
trunk needs to be made available for faxing).
