I tried the VMware route also with 30 users, 12 hard phones and even being a sole VM on a fast host, the quality of voicemail, conferences and autoattendants were randomly affected. Moved to a dedicated and far less powerful host and have had no quality issues since.

I've set them up for development environments, before backup up and saving to a physical production server. Not only do you sometimes hear ripples in the audio (for lack of a better term) but you really need to ensure the clock is accurate on the vs. You could get away with it if the vmware server isn't doing else what so ever but random things will still show up now and then.
