I tried the VMware route also with 30 users, 12 hard phones and even
being a sole VM on a fast host, the quality of voicemail, conferences
and autoattendants were randomly affected. Moved to a dedicated and far
less powerful host and have had no quality issues since.

I have put 20 agents for several days on one VM (under xen) without any
issue, voice quality was really good.

I've set them up for development environments, before backup up and
saving to a physical production server.
Not only do you sometimes hear ripples in the audio (for lack of a
better term) but you really need to ensure the clock is accurate on the
vs. You could get away with it if the vmware server isn't doing else
what so ever but random things will still show up now and then.

Having said that, I've been running fax servers as the only vs on a host
(actually, one of them has a dns server on it as well) and have never
had one single problem with faxes coming in broken.
