Well, My 2 cents are that the most important thing is the settings. If you are able to implement QOS all over the place (storage, virtual networking, virtual servers, VM clock stuff, sipXecs, phone, media gateway) the load should not matter and then you don't have to seperate the media. Anyone has experience with this? I don't know if you can influence the clock stuff??
