  Restoring the whole VM might actually take more time than time than
reinstalling from CD and restoring config from backup.

We mount a cifs/smb share to /media/backups. We then create a symlink from
the SipX backup directory to the /media/backups directory. This allows us
to use the built in backup but have the files saved onto a different host.

Backing up your whole machine will most likely require an expensive
enterprise product like backup exec. Keep in mind that your virtual
machines HDD file will be in a constant state of change while running. So
you will need a backup solution that can trigger vmware's snapshot/save
state technology while initiating the backup.
