View > Fonts > Show Fonts
Tools > Show Color

Select the note, and then select a font or a color in the floating  
panel. RTFM.

The layout of text in the edited text note is done in an ordinary  
text field. We can't control that, it's all Apple's standard private  
code. We can only change the font.
