I've used an Epson 700 printer with Linux - this was with RH5.2 so the
support may have improved.
The quality wasn't as good as with the Windows drivers, but it did work.
What didn't work was that you couldn't print to the shared printer from
Windows NT (this might not be a problem for you). I currently have the
printer connected to my Windows box instead (I rarely need to print
colour.)
