The system will keep running on the second disk without need for reboot
until you replace the disk.

The system will boot normally with or without a new disk and rebuild the
raid afterward though you might have to add the new disk using hotadd
(IIRC)

It will come up providing you've configured and tested properly.  ie you
have the boot order set correctly in the bios.  eg. both disks set as
master, one on each ide channel (in the case of ide disks).  I strongly
recommend testing everything that you expect to happen.  Do a raid
install, then break the raid by powering down and removing power/cable
from one of the disks. Reboot and readd it, then break it again with the
other disk.

Of course you can't perform a hot-break without risking damage to disks
... :-)
