Another option if you have the money, is a SAN with half of the array/mirror offsite, you can have live instantaneous recovery. Just need a fibre link between the two site. But this option doesn't give you historical data.

You have a number of options: - (multiple) CD-Rs - (many?) DVD-Rs - triple mirroring I'm assuming you are mirroing their data, setup a third mirror of it and break that third mirror periodically and move it off site. You'll need something which allows drives to be hot-pluged. You'll need to realise that there is a high probability of disk failure with whatever is doing the triple mirror (taken off-site).
