depends on what you are trying to do. i find that i only use IMAP in two
situations:

- office environments where email is vital. it is much easier to backup one
  server then to backup every workstation.
  
- multiple access methods. people who want to check their email with both
  client software (evolution, thunderbird etc.etc.) or via a web browser
  (using webmail such as squirrelmail).

in all other instances i prefer POP as it's simpler and easier to work
offline.
