I rely on courier-imap (and courier-pop), have been impressed with Cyrus in
the past, but am currently testing dovecot. It looks really sweet, quite
flexible (finally, a pop/imap server that does both mbox and maildir), and
as a measure of suitability, Red Hat are now shipping it as their chosen
pop/imap server.
