Thanks to those who made suggestions. I ended up choosing "HTML5 and CSS3 Illustrated Introductory" as "HTML5 and CSS3 Illustrated Complete" is not yet in print.
I have to heavily supplement the material and lectures, but for this year its a happy compromise. Next year we will have the complete version and the supplemented material, so it should be all good.
Also using Komodo Edit with the html5 toolkit addon for development and Filezilla for upload
